Cut three or four chicken breasts into good sized
chunks. Put in a plastic bag and add 1/4 cup olive
oil, salt and pepper to taste, l tsp. crushed
rosemary, 1/2 tsp. oregano, 10 cloves of whole garlic
and l onion, coarsely chopped. Then cut up about 8
red-skinned potatoes into chunks (leave the peels on)
and put them into a plastic bag with 1/4 cup olive oil
and some salt and pepper. Marinate the chicken and
potatoes for at least an hour.
Then take 2 links of smoked sausage, or kielbasa and
put them into a skillet with a little bit of water.
Cook until heated through or browned, then reserve.
In the same skillet, add about 1/4 cup of olive oil
and the potatoes and cook, turning occasionally, for
about 10-15 minutes (will not be quite done, but will
be browned). In another skillet, at the same time,
dump the bag of chicken and vegetables into 1/4 cup
heated olive oil. Brown for about 10 minutes.
Now take the sausages, chicken, and the potatoes and
other veggies and put them all into a baking dish.
