Chicken and Cheese Quesadilla Pie

1 10 inch flour tortilla
1 chicken  cut into bite sized pieces  (a rotisserie Chicken)
1/2 cup finely chopped cilantro
1/2 drained pickled jalapenos chopped
2 cups shredded cheddar cheese
salt and pepper
2 large eggs
1 cup milk
1 cup all-purpose flour
1 teaspoon baking powder

Oven 450 degrees
Spray a deep dish pie pan with cooking spray.
Press tortilla into the pan and spray with cooking spray.
Toss chicken, cilantro, jalapenos, 1 cup of the cheese, 1/2 t. salt and 1/2 t. pepper in large bowl until combined and then pour over tortilla.

Whisk eggs, milk, flour, baking powder, and 1/2 t. salt until smooth.  Slowly pour over filling.  Sprinkle with remaining cheese.

Bake until surface is golden brown (about 20 minutes).  Let cool 5 minutes. Slice and serve with salsa and sour cream.
